6 Week Bran Muffin Mix

My sweet friend Lainie (also know for her Tiger Butter) brought me homemade muffin mix on Friday and it made my day! On Saturday I poured the mix in the muffin pan and then let everyone add in what they wanted. Some did banana & pecans, raisin & pecans and others chocolate chips. Everyone loved them - even my pickiest eater!!

1 C boiling Water
1 C All Bran Cereal
1/2 C Oil
1 1/2 C Sugar
2 Eggs
2 1/2 Cups Flour
2 1/2 Tsp Flour
1/2 Tsp Salt
2 C Buttermilk
2 C Bran Flakes Cereal

Pour the boiling water over All Bran and set aside to cool. Mix other ingredients in order given. Add All bran and mix thoroughly. Store in a covered container in refrigerator for up to six weeks.

To bake:
Preheat over in 350*. Bake in greased muffin tins, filled 2/3 full of batter. If you want to add "mix-ins" do so now. Hint: you might want to press the mix-ins down a bit in the batter. Bake for 20 to 30 minutes (check after 20 minutes if toothpick comes out clean they are done).
