Another one of Meridith recipes that I will be making later in the week. I will make some slight changes - here is the original recipe.
1 Tbsp olive oil
1/2 cup shallot, finely chopped
1/4 cup (15 oz can) petite diced tomatoes, pureed (freeze the rest)
1 4oz can chopped green chilies
1 clove garlic, minced
2 1/2 cups cooked chicken, shredded
1 can refried black beans
flour tortillas
Toppings:
salsa
grated reduced fat cheddar cheese
shredded lettuce
lit sour cream
guacamole
Heat oil in skillet and saute shallots, chilies, and garlic until tender. Add chicken and tomatoes - heat through. In separate saucepan, heat beans. Keep warm. Top tortillas with beans, chicken mixture, and desired toppings.
